SOKA & TAMBOO BAMBOO

SOKA hot pepper sauce is inspired by the legendary sauce conjured up in my Aunt Cynthia’s Moruga kitchen. I had the honor of being her pupil over the years, helping her pick peppers from the garden in the trace, peering pointedly over her shoulder as she combines ingredients. She never measures, everything happens by feel. “Ah does average.” She’d say in her usual operatic voice. I’d hang onto every word as it rung through the kitchen, the corridor and ear canals of passersby.

That time I ate a whole Moruga Chocolate 7-pot pepper and the trippy moments that followed. While my soul was melting in liquid sunlight, the rest of the peppers were bathing in and absorbing as much of the bright stuff as they could. The most flavorful and challenging peppers in the world originate here. Born in their native soil, raised and sun-dried by the Caribbean sun.

Sweet Hand

In Trinidad and Tobago, a ‘Sweet Hand’ belongs to any person who knows their way around a kitchen, possessing a hand so sweet that you’d beg to eat from it.

This was filmed a few years back when I was still a mere apprentice in my Aunty’s Moruga kitchen. I gave Candie some early Tamboo Bamboo sauce (Hot Tamarind) to try in her hammock.
